Stir in some diced Spanish chorizo with scrambled eggs, and add coffee for a savory start to your day.

- 8 oz Aurelia's Spanish chorizo (spicy cured pork sausage)
- 10 large eggs
- Garnish: chopped fresh parsley
- Accompaniment: toasted baguette slices
Finely chop the Spanish chorizo, then cook in a 12-inch nonstick skillet over moderate heat, stirring, until some of the fragrant oil is released, 4 to 5 minutes.
Whisk eggs together in a bowl and stir into chorizo. Cook, stirring, until eggs are scrambled and just set, about 5 minutes. Serve immediately.
