Ingredients:

  • 1 package of Aurelia’s Snack Sticks (Spanish Chorizo flavor)
  • 1 large russet potato, peeled
  • 3 cups Spanish olive oil, for frying
  • Sea salt for sprinkling

Directions:

  1. Slice Aurelia’s Snack Sticks into 3 equal lengths.
  2. Fill a bowl with ice water. Using a mandoline, thinly slice the potato lengthwise and place the slices into the bowl. You’ll need 12 large slices; reserve smaller slices for another use.
  3. Pat a potato slice dry with a paper towel and lay it on a clean surface. Place a piece of Spanish Chorizo Snack Stick in the center, fold the potato slice over it like a taco, and secure it with a toothpick.
  4. >Heat the olive oil in a medium pot to 325°F. Fry the potato-wrapped snack sticks in batches until golden and crispy, about 2-3 minutes. Transfer to a paper towel-lined tray to drain.
  5. Sprinkle with sea salt and serve warm.
