De la Vera paprika, also known as pimentón de La Vera, is a much sought-after spice that originated in the La Vera region of Spain. It’s made from Spanish peppers that are slowly dried over oak fires for 10–15 days. The quality of the paprika is often attributed to the fertile soils and mild climate of the Tiétar River area. The result is a spice that’s smoky and flavorful, with varying levels of heat and sweetness depending on the blend of peppers used. We use a combination of sweet and spicy in our artisan Spanish Chorizo.
